Chopped Chicken Salad
Fresh summer salad with Chicken, Cucumber and Avocado

Ingredients
- 4 cups Spinach
- 8 oz Chicken
- 2 Eggs hard boiled
- 4 slices Bacon
- 1 cup Cucumber chopped
- 1 Avocado
- 2 Tbsp Olive Oil extra vergine
- pinch Sea Salt
- pinch Ground Pepper
Instructions
- Preheat the oven to 350F/175C.
- Bake the chicken breast in a dish with olive oil, salt and pepper for about 30 minutes.8 oz Chicken, 2 Tbsp Olive Oil, pinch Sea Salt, pinch Ground Pepper
- While the chicken is cooking, wash the spinach and place it at the base of a salad bowl.4 cups Spinach
- Place all the remaining ingredients on top of the spinach.4 cups Spinach, 2 Eggs, 4 slices Bacon, 1 cup Cucumber, 1 Avocado
- Once the chicken is done, add it to the bowl8 oz Chicken
- Lastly drizzle the olive oil on top and add sea salt and pepper, if desired.2 Tbsp Olive Oil, pinch Sea Salt, pinch Ground Pepper
Notes
For a fresh kick, you can use the juice of a lemon for the acidity
