Sweet Potato & Chickpea Curry
- 1.5 cup Sweet Potato
- 1 can Chickpeas
- 1 cup Coconut Milk
- ¼ cup Onion chopped
- 1 can Tomato chopped
- 1 tbsp Olive Oil extra virgin
- 1 tbsp Ground Turmeric
- 1 tbsp Ground Cumin
- 1 tbsp Ground Ginger
- 1 tsp Sea Salt
- In a large pot, heat the olive oil and the onions and the spices. Cook until the onions become translucent.1 tbsp Olive Oil, ¼ cup Onion
- Next, add in the rest of the ingredients, making sure that the sweet potatoes are completely covered with the liquid.1.5 cup Sweet Potato, 1 can Chickpeas, 1 cup Coconut Milk, 1 can Tomato, 1 tbsp Ground Turmeric, 1 tbsp Ground Cumin, 1 tbsp Ground Ginger, 1 tsp Sea Salt
- Bring the curry to a boil and then turn down to a simmer for about 40 minutes, until the sweet potatoes are completely done.
