Ingredients
  

  • 1.5 cup Sweet Potato
  • 1 can Chickpeas
  • 1 cup Coconut Milk
  • ¼ cup Onion chopped
  • 1 can Tomato chopped
  • 1 tbsp Olive Oil extra virgin
  • 1 tbsp Ground Turmeric
  • 1 tbsp Ground Cumin
  • 1 tbsp Ground Ginger
  • 1 tsp Sea Salt

Instructions
 

  • In a large pot, heat the olive oil and the onions and the spices. Cook until the onions become translucent.

  • Next, add in the rest of the ingredients, making sure that the sweet potatoes are completely covered with the liquid.
    1.5 cup Sweet Potato, 1 can Chickpeas, 1 cup Coconut Milk, 1 can Tomato, 1 tbsp Ground Turmeric, 1 tbsp Ground Cumin, 1 tbsp Ground Ginger, 1 tsp Sea Salt
  • Bring the curry to a boil and then turn down to a simmer for about 40 minutes, until the sweet potatoes are completely done.
