Veggie Scrambeled Eggs & Avocado
Ingredients
- 2 Eggs
- 1 cup Spinach
- 2 Mushrooms
- ¼ Red Bell Pepper
- ¼ cup Red Onions chopped
- ½ Avocado
- 1 tbsp Coconut Oil
Instructions
- Heat a pan on medium heat and add the coconut oil
- Once the coconut oil is melted, add all the vegetables except for the spinach and cook for 3 minutes.
- Next add the eggs and spinach.
- Once the scramble is done, add the sliced avocado on top.
- Season with salt and pepper to your desire.
