  • 2 Eggs
  • 1 cup Spinach
  • 2 Mushrooms
  • ¼ Red Bell Pepper
  • ¼ cup Red Onions chopped
  • ½ Avocado
  • 1 tbsp Coconut Oil


  • Heat a pan on medium heat and add the coconut oil
  • Once the coconut oil is melted, add all the vegetables except for the spinach and cook for 3 minutes.
  • Next add the eggs and spinach.
  • Once the scramble is done, add the sliced avocado on top.
  • Season with salt and pepper to your desire.
