Ingredients
  

  • 2 small Sweet Potatoes
  • 1 cup Black Beans
  • 1 cup Corn
  • 1 Avocado

Homemade Salsa

  • 2 Tomatoes
  • ½ cup Cilantro
  • ¼ cup red Onion sliced
  • 2 tbsp Lime Juice
  • pinch Saöt & Pepper

Instructions
 

  • Preheat the oven to 425F/220C.
  • Wash and scrub the potatoes and pierce holes all around it with a fork. Bake in the oven for 45-50 minutes.
    2 small Sweet Potatoes
  • While the sweet potatoes are baking, combine the black beans and corn in one bowl.
    1 cup Black Beans, 1 cup Corn
  • In a separate bowl, combine all the ingredients for the salsa.
    2 Tomatoes, ½ cup Cilantro, ¼ cup red Onion, 2 tbsp Lime Juice, pinch Saöt & Pepper
  • Once the sweet potatoes are done, stuff it will the bean mixture, then top it with the salsa and avocado.
