Ingredients
  

  • 2 Portabello Mushroom
  • 1 Red Bell Pepper
  • ¼ cup Onions
  • 2 cloves Garlic
  • ½ cup Rice
  • 1 cup Water
  • ½ cup Guacamole
  • 1 tsp Coconut Oil

Fajita Seasoning

  • 2 tbsp Paprika
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tsp Cayenne Powder

Instructions
 

  • Place a pot on high heat, add water and rice. Cook for about 25 minutes
    ½ cup Rice, 1 cup Water
  • Place a pan on medium heat and add the coconut oil.
    1 tsp Coconut Oil
  • Once the oil has melted, add the onions and garlic and sauté for 1 minute.
    ¼ cup Onions, 2 cloves Garlic
  • Next, add the red pepper and portabello mushroom cut into long, slices.
    2 Portabello Mushroom, 1 Red Bell Pepper
  • Add the fajita seasoning and cook for another 5-7 minutes.
    1 tbsp Garlic Powder, 1 tbsp Onion Powder, 1 tsp Cayenne Powder, 2 tbsp Paprika
  • Meanwhile prepare the guacamole.
    ½ cup Guacamole
  • Once everything is ready, combine the portabello mixture, brown rice and guacamole in a big bowl.
