Place a pot on high heat, add water and rice. Cook for about 25 minutes
½ cup Rice, 1 cup Water
Place a pan on medium heat and add the coconut oil.
1 tsp Coconut Oil
Once the oil has melted, add the onions and garlic and sauté for 1 minute.
¼ cup Onions, 2 cloves Garlic
Next, add the red pepper and portabello mushroom cut into long, slices.
2 Portabello Mushroom, 1 Red Bell Pepper
Add the fajita seasoning and cook for another 5-7 minutes.
1 tbsp Garlic Powder, 1 tbsp Onion Powder, 1 tsp Cayenne Powder, 2 tbsp Paprika
Meanwhile prepare the guacamole.
½ cup Guacamole
Once everything is ready, combine the portabello mixture, brown rice and guacamole in a big bowl.
