Ingredients
  

  • 4 cup Spinach
  • 2 cup Quinoa cooked
  • 1 cup Chickpeas
  • 1 Red Bell Pepper chopped
  • 1 cup Cucumber sliced
  • 2 tbsp Olive Oil extra virgin
  • 2 tbsp Lemon Juice
  • pinch Salt & Pepper

Instructions
 

  • Prepare the quinoa by following the instructions provided on the packaging.
    2 cup Quinoa
  • While the quinoa is cooking, prepare all the vegetables and place them in a bowl.
    4 cup Spinach, 1 Red Bell Pepper, 1 cup Cucumber
  • Drain and rinse the chickpeas.
    1 cup Chickpeas
  • Once everything is in the bowl, drizzle the lemon juice and olive oil on top. Sprinkle with salt and pepper.
    2 tbsp Olive Oil, pinch Salt & Pepper, 2 tbsp Lemon Juice
