- 2 cup Quinoa cooked
- 1 cup Chickpeas
- 1 Red Bell Pepper chopped
- 1 cup Cucumber sliced
- 2 tbsp Olive Oil extra virgin
- 2 tbsp Lemon Juice
- pinch Salt & Pepper
Prepare the quinoa by following the instructions provided on the packaging.

While the quinoa is cooking, prepare all the vegetables and place them in a bowl.
