Ingredients
- 4 cup Spinach
- 2 cup Quinoa cooked
- 1 cup Chickpeas
- 1 Red Bell Pepper chopped
- 1 cup Cucumber sliced
- 2 tbsp Olive Oil extra virgin
- 2 tbsp Lemon Juice
- pinch Salt & Pepper
Instructions
- Prepare the quinoa by following the instructions provided on the packaging.2 cup Quinoa
- While the quinoa is cooking, prepare all the vegetables and place them in a bowl.4 cup Spinach, 1 Red Bell Pepper, 1 cup Cucumber
- Drain and rinse the chickpeas.1 cup Chickpeas
- Once everything is in the bowl, drizzle the lemon juice and olive oil on top. Sprinkle with salt and pepper.2 tbsp Olive Oil, pinch Salt & Pepper, 2 tbsp Lemon Juice
