Deconstructed Portobello Fajita

Ingredients
- 2 Portabello Mushroom
- 1 Red Bell Pepper
- ¼ cup Onions
- 2 cloves Garlic
- ½ cup Rice
- 1 cup Water
- ½ cup Guacamole
- 1 tsp Coconut Oil
Fajita Seasoning
- 2 tbsp Paprika
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 tsp Cayenne Powder
Instructions
- Place a pot on high heat, add water and rice. Cook for about 25 minutes½ cup Rice, 1 cup Water
- Place a pan on medium heat and add the coconut oil.1 tsp Coconut Oil
- Once the oil has melted, add the onions and garlic and sauté for 1 minute.¼ cup Onions, 2 cloves Garlic
- Next, add the red pepper and portabello mushroom cut into long, slices.2 Portabello Mushroom, 1 Red Bell Pepper
- Add the fajita seasoning and cook for another 5-7 minutes.1 tbsp Garlic Powder, 1 tbsp Onion Powder, 1 tsp Cayenne Powder, 2 tbsp Paprika
- Meanwhile prepare the guacamole.½ cup Guacamole
- Once everything is ready, combine the portabello mixture, brown rice and guacamole in a big bowl.
