Mexican Scramble

Ingredients
- 2 Eggs
- ½ cup Sweet Potatoes diced
- ½ cup Black Beans
- ½ cup red Pepper
- ½ Avocado
- pinch Sea Salt
- pinch Pepper
- 1 tsp Coconut Oil
Instructions
- Heat a pan on medium heat and add the coconut oil.1 tsp Coconut Oil
- Once the coconut oil is melted, add in the diced sweet potatoes and red pepper. Cover and cook for 8 minutes.½ cup Sweet Potatoes, ½ cup red Pepper
- Once the sweet potatoes are soft, add in the black beans for 2 minutes to heat up.½ cup Black Beans
- Add the 2 eggs, and stir into a scramble.2 Eggs
- Once the scramble is done, top it with an avocado, salt, pepper and hot sauce, if desired.½ Avocado, pinch Pepper, pinch Sea Salt
