Ingredients
  

  • 2 Eggs
  • ½ cup Sweet Potatoes diced
  • ½ cup Black Beans
  • ½ cup red Pepper
  • ½ Avocado
  • pinch Sea Salt
  • pinch Pepper
  • 1 tsp Coconut Oil

Instructions
 

  • Heat a pan on medium heat and add the coconut oil.

  • Once the coconut oil is melted, add in the diced sweet potatoes and red pepper. Cover and cook for 8 minutes.
    ½ cup Sweet Potatoes, ½ cup red Pepper
  • Once the sweet potatoes are soft, add in the black beans for 2 minutes to heat up.
    ½ cup Black Beans
  • Add the 2 eggs, and stir into a scramble.

  • Once the scramble is done, top it with an avocado, salt, pepper and hot sauce, if desired.
    ½ Avocado, pinch Pepper, pinch Sea Salt
