- 4 cups Kale
- 8 oz Chicken Breast
- 1 Sweet Potato
- 1 Avocado
- 1 Red Bell Pepper
- 1 tsp Olive Oil
Dressing per Serving:
- 1 Tbsp Tahini
- 1 Tbsp Lemon Juice
Instructions
- Preheat the oven at 350F/175C
- Place the chicken breast and cube sized sweetpotatoes on a baking tray with parchment paper and bake for 30 minutes.8 oz Chicken Breast, 1 Sweet Potato
- Meanwhile, clean and chop the kale. Once the kale isrready,mix it in with the olive oil and massage it into the kale.4 cups Kale, 1 tsp Olive Oil
- Chop the red peppers and avocado.1 Avocado, 1 Red Bell Pepper
- Prepare the dressing by mixing the tahini and freshlemon juice.1 Tbsp Tahini, 1 Tbsp Lemon Juice
- Once the chicken and sweet potatoes are done, placethe massaged kale at the bottom of a dish and add all the other ingredients ontop of it, finishing off with the dressing.
