  • 4 cups Kale
  • 8 oz Chicken Breast
  • 1 Sweet Potato
  • 1 Avocado
  • 1 Red Bell Pepper
  • 1 tsp Olive Oil

Dressing per Serving:

  • 1 Tbsp Tahini
  • 1 Tbsp Lemon Juice


  • Preheat the oven at 350F/175C
  • Place the chicken breast and cube sized sweetpotatoes on a baking tray with parchment paper and bake for 30 minutes.
    8 oz Chicken Breast, 1 Sweet Potato
  • Meanwhile, clean and chop the kale. Once the kale isrready,mix it in with the olive oil and massage it into the kale.
    4 cups Kale, 1 tsp Olive Oil
  • Chop the red peppers and avocado.
    1 Avocado, 1 Red Bell Pepper
  • Prepare the dressing by mixing the tahini and freshlemon juice.
    1 Tbsp Tahini, 1 Tbsp Lemon Juice
  • Once the chicken and sweet potatoes are done, placethe massaged kale at the bottom of a dish and add all the other ingredients ontop of it, finishing off with the dressing.
