Stuffed Sweet Potato

Ingredients
- 2 small Sweet Potatoes
- 1 cup Black Beans
- 1 cup Corn
- 1 Avocado
Homemade Salsa
- 2 Tomatoes
- ½ cup Cilantro
- ¼ cup red Onion sliced
- 2 tbsp Lime Juice
- pinch Saöt & Pepper
Instructions
- Preheat the oven to 425F/220C.
- Wash and scrub the potatoes and pierce holes all around it with a fork. Bake in the oven for 45-50 minutes.2 small Sweet Potatoes
- While the sweet potatoes are baking, combine the black beans and corn in one bowl.1 cup Black Beans, 1 cup Corn
- In a separate bowl, combine all the ingredients for the salsa.2 Tomatoes, ½ cup Cilantro, ¼ cup red Onion, 2 tbsp Lime Juice, pinch Saöt & Pepper
- Once the sweet potatoes are done, stuff it will the bean mixture, then top it with the salsa and avocado.1 Avocado
